Best Moment This Week: Feeling great! I really need to sit back and be thankful for this!

I'm still feeling amazing and have been able to have some great workouts this week!! I even ran a 10:30 mile, which I was pretty impressed with!! Staying active makes me feel a lot better and is the main reason I think I sleep so well!!

Vince is doing great! He kisses my belly, but I don't think fully understands just yet! I often wonder how he will do with her! Any advice please on bringing a baby home, please let me know!

As far as everything else, we had an amazing week where it was mostly overcast and rain almost everyday, but is now back in the 90s. Needless to say I am ready for fall!!

Why I went paleo mid pregnancy and a recipe that's eggless too!

I have had a couple people as me about my experience with paleo and why I went paleo mid pregnancy. I figured since it has been 3 weeks of going paleo strong with only a few cheats I would share.

So a little back story, soon after I started Crossfit and googling "Miranda Oldroyd Diet" I heard the word Paleo. So I started researching and pinning just about everything I could on pinterest. I soon learned that while eating paleo you cant have dairy, grains, sugars or legumes. The reasons you don't eat these is because they spike your blood sugar which in turns causes your body to crash, which can be the reason you get tired during the middle of the day. These foods are also harder for your body to process which can lead to bloating, headaches, gas and other uncomfortable side affects.

For me when I started it was more about weight loss than anything else. I wanted to get rid of the 5 or extra pounds that I could kick off after Vince. Which it did I ended up loosing weight almost immediately, but more importantly I was getting zero headaches! I went 21 days headache free, which was awesome. At the time I was getting them 3-4 times a week and ibuprofen each time.

I felt happier, had more energy, and was hitting personal records in the gym left and right. I could run easier, lift heavier and overall just felt great.

After my 21 days of strict paleo I fell off, but always continued to try and cook paleo dinners and make more paleo choices. I have done that for the last year and a half, until now.

Now I am 3 weeks in and have let my self had a few cheats, some black beans, a little dairy and the biggest, a slice of pizza at a friends house. Eating these cheats after being pretty strict hurt my stomach pretty badly. I noticed I immediately got bloated, cranky and tired. I usually regretted it right away.

My decision to go back to eating 90% (somedays more, somedays a little less) were mostly again about weight. I know during my pregnancy that I really shouldnt worry about my weight, but that is what I did last time and gained 48 pounds, which if you have been reading for a while, you saw just how hard it was for me to take it off. While pregnant with Vince I told myself it was ok to eat McDonalds rolo mcflurry's and tons of bean and cheese burritos all because I did zumba twice a week, ran once a week and did light weights. I knew very little about eating healthy. I also wanted to feel good during the day and was noticing I was always a little sluggish, which made working out difficult. I was getting headaches again and since I can only take tylenol which doesnt get rid of my headaches, I knew I had to make a change. I thought about it for a while and one morning I made eggs, bacon and avocado and just decieded that I would try it out. I didnt put any pressure on myself and honestly it's why I think I have lasted so long. I knew I couldnt do a Whole 30, but I knew I could change the way I ate.

I also was inspired by the bookPaleo Moms Look Good Naked. Which I now recommend to any women, pregnant or not. It is so factual on why to eat the primal way and really what grains and sugars do to our body. It even more made me want to change my ways. A quote from the book that really stuck was " You're not eating for two, but living for two." How could that not inspire you to want to make a healthy life change.

I am now 24 weeks and have gained 11 pounds. When I first started eating paleo, I lost 3 and have gained 1 pound back. I have spoken to my doctor and she says my weight gain in perfect and supports my decision to continue my paleo lifestlye while pregnant.

So that is my paleo journey so far and I recommend it to anyone who wants to start feeling better, help with inflammation, get rid of headaches and loose weight. I plan on keeping this up throughout the rest of my pregnancy and even after.

Now for fun recipe!

Pumpkin Paleo and Eggless Muffins

First found the recipe on Paleo Newbie and modified it just a bit!

Ingredients

1 1/2 cup of almond flour
1 cup of canned pumpkin
2/3 cup of applesauce (egg replacer)
1/3 cup raw honey
1 tsp baking powder
1 tsp baking soda
1 tbs cinnamon
1 tbs pumpkin pie spice
1 tsp of vanilla
3 tbs of coconut oil, melted

-Preheat oven to 350 degrees
-In one bowl mix all dry ingredients and all wet ingredients in another
- Slowing mix in all wet ingredients with the dry while stirring.
- With a small spoon scoop into muffin tin. They didn't rise so you can fill it pretty high.
-Cook for 20 minutes or until a toothpick comes out dry
- Let cool and drizzle a tiny amount of raw honey overtop and enjoy!

These weren't very sweet at all, but taste amazing! I wish I could let you know how Vince liked them, but he wasn't in the mood last night. But as for Jacob and I, we loved it!!
